Tomato cucumber mozzarella salad. It’s the perfect summer side dish to any meal. So easy and so delicious, it can really be served any time of year!
Caprese salads have been a long-time favorite of mine and my hubby’s. It’s a quick and easy, light and refreshing, healthy and tasty side that goes with just about anything. Last year, Little Sis asked if she could try some. We were surprised as she had always been so adamant that she didn’t like tomatoes. But, after years of watching us, she just couldn’t resist it any more. That was not surprising from our little lover of food. And what do you know, she LOVED it! She loved it so much that she would jump up and down in excitement whenever we’d make it. Her enthusiasm for it even made Big Sis want to taste it, who came to love it, too. Now that was a HUGE accomplishment! Today, we all enjoy it together.
Just last week, we hosted a family gathering to celebrate our amazing Nana’s birthday. We had brats, smoked mozzarella pasta salad, corn, mac and cheese for the kids. I wanted to serve some sort of simple salad, too. We had tomatoes and a cucumber that needed to get used up, so I threw this together, a nice little variation with a little more crunch and volume, thanks to the cucumbers.
Tomato Cucumber Mozzarella Salad (with basil of course)
Ingredients
- 1 English cucumber halved and cut into 1/4 inch slices
- 8 oz grape tomatoes cut into halves or thirds (mine were thirded – lol)
- 4 oz fresh mozzarella cubed
- 3-4 fresh basil leaves about 1 Tbsp, chopped + more for garnish if desired
- 1 1/2 Tbsp balsamic vinegar
- 1 1/2 Tbsp olive oil
- 1/2 tsp dried oregano
- Salt and pepper to taste
Instructions

Place cucumber and tomatoes in a large bowl and top with fresh basil.

In a smaller bowl, combine the vinegar, oil and spices. Whisk until mixed well.

Pour over veggies in large bowl and the veggies are evenly coated.

Place in fridge until serving time.

Just before serving, add mozzarella gently mix them in.

Top with additional basil for garnish if desired
