I was SO excited and honored when Spry Living Magazine asked ME to contribute to a web article titled “10 School Lunch Ideas Your Kids Will Actually Eat” Hey, I actually know a little something about that! Well, here’s my SPRY Living Magazine Healthy Lunch Post. I decided to go with one of my most popular lunch posts: Corn Dog Muffin Minis. I LOVE that this typically unhealthy food is made better AND kids still like them!
In this lunch:
- Corn Dog Muffin Minis
- Raw organic broccoli florets from my CSA Papa Spuds
- Heinz Organic Ketchup
- Peeled Snacks’ Organic AppleClusters w/ Trader Joe’s Organic Dried Cranberries for Big Sis and fresh black cherries for Little Sis (with stems on because that’s the way she likes ’em)
- Maplehurst Bakeries’ Peanut-Free Mini Cupcakes*

Here’s a link to the Corn Dog Mini Muffins recipe. Please note that it’s really hard not to eat half a batch of these while cooking, so be sure to make extra! Not only are they delicious, they aren’t awful for you like your typical corn dogs. These are made with Applegate’s Natural Hot Dogs which are antibiotic-free, hormone-free and contain no nitrates except for those that are naturally occurring in sea salt and celery! On top of that, I made the muffins with organic corn meal and flour. Add in organic eggs and sugar, these are almost completely organic!
Make these ahead of time and store them either in freezer or refrigerator. For school lunches, simply stick them straight into lunch boxes from the freezer/fridge since they’ll be room temp by lunch time. You can also heat them up in the toaster oven and then stick them in the lunch box. Once again, they’ll be room temperature come lunch time. For those of you who have access to a microwave at lunch, you could nuke ’em on a paper towel right before lunch. Personally, I love them best right out of the oven, but my kids seem to eat them at room temp just fine.
