Big Sis loves watching iCarly and therefore, so does Little Sis. It’s one of those shows that I hesitated to let them watch. But, they got a taste of it during one of their week-long visits w/ my parents. Big Sis has lobbied hard for it ever since. I finally started letting her watch it when she turned 7 which meant Little Sis started watching it at 4. Oops! Oh well. It actually wasn’t as inappropriate as I feared and we were all quite entertained by it, especially Daddy. You could hear him laughing from all the way upstairs when it was on. So, it was quite bittersweet when the series just recently aired their final episode. Kids. Why do they have to grow up and turn into kissy young adults?!? We laughed, we cried (at least got a little teary-eyed on occasion), we ate spaghetti tacos!
The first time we encountered Spencer’s spaghetti tacos, we all thought “Ok, that’s weird.” But then it occurred to me, why not give ’em a try? Especially since tacos weren’t already in the girls’ repertoire, why not try to expand their taste buds? I made a special spaghetti sauce using my go-to organic basil jarred sauce with ground chicken and all sorts of diced veggies like mushrooms, onions and even kale! Normally, the girls don’t like it that much, probably because of the chicken bits. Just look at all that goodness, though!
Now, all of that is totally hidden by the crunch of the taco shell, noodles and the shredded cheese on top. Guess what!?!? They LOVED it! We all did! So now I love to cry out: “It’s Spaghetti Taco night!!” and love the girls squealing with delight. Woo hoo! It’s one time I don’t mind hearing them yell!
In the past, I’ve always served this on a plate or bowl but it always ended up w/ super messy results. Looked around a bit for “taco holders” but never really ran across any that I liked. But this time it dawned on me to use my EasyLunchboxes, even though we were at home eating dinner. It was the perfect way to eat them. The tacos stayed upright and as long as the girls ate over them (which is the tricky part), the mess was contained! So ELBs aren’t just for on-the-go, they are also for eating messy stuff at home!
I was so excited when I ran across some individual taco holders in the grocery store recently and snatched them up. Of course, there are so many cool taco holders available on Amazon now. I picked out some of my favorites below. I still love mine, though, because they stack so well and take up very little space in my drawer. But how cool are the dinosaurs?!?!

I have packed them in lunches too, I just pack the hot spaghetti in a Thermos for her to build the taco herself at lunchtime – she even has an iCarly thermos!
