Even though the girls have been tracked out of school, things seem to be busier than ever. With the half-day, week-long soccer camp the girls are registered for as well as their individual weekly practices, I’ve been running around like a crazy person.
Take yesterday, for example. Between a doctor’s appointment in the morning for Big Sis, soccer camp from 1-4pm and then Big Sis’ soccer practice at 5:30pm, that didn’t leave a whole lot of down time, nor time for cooking! On our way home from camp, Big Sis said she really wanted a Subway sub. I didn’t want to eat out so instead we made a quick stop at the grocery store to let Big Sis pick out her fave sub rolls and lettuce. I normally use wheat bread and spinach, but thought I’d let her exercise some power of choice tonight. Little Sis requested to add her favorite Man Chips (Pringles Sour Cream Chips) to the list, so oblige I did.
By the time we got home, I barely had time to throw this together for them to take to soccer practice. These seemed kinda big to me, but much to my surprise, Little Sis HOUSED hers during Big Sis’ practice and Big Sis SCARFED hers down on our way back home. Wow, I’d say they were quite a hit!
In these dinners:
- Trader Joey’s Frozen Peas, lightly boiled and seasoned w/ a pat of butter and a dash of Kosher salt
- Pringles Sour Cream potato chips aka “Man Chips”
- Big Sis: Applegate Ham with Applegate American Cheese, red leaf lettuce and mayo.
Little Sis: Applegate Ham and Applegate pepperoni and Trader Joe’s Muenster Cheese both on Cobblestone Mill Philly Style Hoagies. Too bad these have High Fructose Corn Syrup, but they taste soooooo good that I cave in every once in a while. - 2 strawberries for Little Sis
We didn’t make it home from soccer practice until almost 7pm, so guess what the hubby and I had for dinner? That’s right, subs!! But ours had more kick to it. Yum. We love kick.
- Sub with Applegate American cooked ham and cheese with spinach, mayo, Dijon mustard and Wickles zesty relish
- side o’ organic grape tomatoes
- Kettle Brand Spicy Thai Potato Chips
- Green Giant Healthy Weight Frozen Veggie Pouch containing: Sliced carrots, sugar snap peas, black beans and edamame lightly tossed in butter sauce.
Re-reading this post just reminded me of the grocery shopping trips my brother and I would take with my mom on Saturdays when we were younger. Occasionally we’d spy some really yummy sub rolls and then get all sorts of fixin’s to go with ’em. We’d go home, layout our spread and we would make BEST Dagwoodish subs EVER and then be stuffed full. Aaaaah, sweet childhood memories.
