I never liked cottage cheese. At least that’s what I thought. As recently as last year, my dear dad offered me some of his cottage cheese to which I crinkled up my nose and snottily replied, “Ewwwww!” Yes, kids can even be snotty at 41. Even though my parents ate it throughout my childhood, I never liked the looks of it. So lumpy and mushy!
Then one day, my sweet friend Nancy offered some cottage cheese topped with crushed canned pineapples to Little Sis as a snack during a playdate. She said “MMMMM!” after the first bite but then didn’t want any more. I guess she didn’t really like it and was just being polite – lol? Not wanting to let perfectly good food go to waste, I decided to give the ol’ cottage cheese another try. Plus, I didn’t want to be snotty to Nancy like I was to my dad!
Guess what?!?! It was NOT disgusting like I always thought it was! It was actually pretty good, especially with that crushed pineapple on top! Now I’m a regular eater of cottage cheese, but I can only eat it with lots of fruit on top. Or In Mr. Glen’s Lasagna. The canned pineapple with some juice is definitely an award-winning combination. But I do have to use a small spoon because bigger spoonfuls of it have still been known to induce my gag reflex, but whatever, right? Yay for me I LIKE cottage cheese!
Below, I topped it with applesauce after my seriously talented bento blogging friend Venia over at Organized Bites suggested it one day. Mmmmm, a most acceptable and tasty suggestion! Thanks Venia!
So here’s my breakfast, lunch, snack, whatever, as you can eat it whenever! Thank you Nancy for expanding my food horizon!
In my cottage cheese lunch:
- Trader Joe’s Lowfat Cottage cheese topped with Trader Joe’s Organic Applesauce (jarred), organic strawberries and blueberries.
- Kashi’s Original 7 Grain Sea Salt Pita Crisps
- Sugar snap peas
Here’s a bowlful topped with crushed pineapples, strawberries and blueberries. Similar look, different taste.
