Today is my cousin Austin’s birthday and what better way to celebrate than with an Oreo Ice Cream Cake! Actually, he’s more like our practice kid since my hubby and I didn’t have kids of our own when he was born. We had so much fun with him as a little kid and we’ve enjoyed watching him grow from an adorable, amazing, funny, sweet little boy into a young adult with all the same traits who still somehow seems to enjoying hanging out with us! For the record, his little sis is pretty amazing, too!
He and his family are here visiting and I asked him what cakes he likes. “Ice cream cake!!!”, he quickly answered! So, I checked out ALL the ice cream cakes at a couple local grocery stores and not a single one was safe for my girls to eat with their severe nut allergies. ALL of them were “made on shared equipment with peanuts and tree nuts.” Waaaah! We SO wanted that Oreo Ice Cream Cake we spied in the freezer case!
As we’ve come to find, sadly, there aren’t too many store-bought ice cream cakes that the girls can eat. Little Sis is severely allergic to peanuts and Big Sis is severely allergic to tree nuts! Dairy Queen does have one but honestly, I’m not a huge fan of theirs. Though that layer of crunchies is good, I prefer actual cake with my ice cream and not the other way around. We used to get them from Cold Stone until my ‘nut-free’ birthday cake a few years ago came with a unwelcomed surprise layer of peanut butter! No longer do we get cakes from them!
Thank goodness Little Sis only took a teeny tiny taste of her piece before spitting. She said she didn’t like it. It wasn’t until Big Sis started yelling, “This has peanut butter in it!!” that we figured out why. We watched her like a hawk for about an hour but then it was bedtime. After a couple more hours of keeping an eye on her ask she slept, she finally puked all over herself while sleeping right through it. Poor funny little thing. Luckily, I had put her down to sleep on a water-proof mattress cover on my bed and towels to cover the floor. That made the clean up much more manageable.
I thank my lucky stars that I awoke to an energetic Little Sis jumping up and down on the bed the next morning like nothing ever happened. Whew! ANYWAY… Well, I took matters into my own hands and decided to make my own Oreo Ice Cream Cake. I started with my favorite cupcake recipe: Pastry Affair’s Vanilla Cupcakes. Then, I added about 16 coarsely chopped Double Stuffed Oreo Cookies to the batter and mixed well. I taste-tested a couple, of course, to make sure they were acceptable. ; )
Below is the batter in an 8″x8″ or 9″x9″ baking dish. I’m not sure which, but either would do.
And here’s the cake right out of the oven. This one took a while to bake – about 30 minutes. You should definitely keep a watchful eye out on yours at around the 25 min mark. Mine got a little browner than I would have liked, but the inside just wasn’t cooking very quickly. I guess that’s why it’s called a CUPCAKE recipe. But this still turned out FABULOUSLY!
Ooops! I forgot to take pictures of the next step, but I let the cake cool in the baking dish for a few minutes then loosen the edges with a knife and carefully flip it out onto a plate (upside down) and let cool COMPLETELY. Then, cut the cake in half, laterally and placed the top half onto a separate plate.
Next, I emptied the ice cream out from the container onto a cutting board and sliced it evenly into thirds. My ice cream carton wasn’t full, but I still had plenty.
I placed the 1st third of ice cream onto one corner of the cake and then cut the other pieces of ice cream to fit accordingly. I even had some ice cream left over.
Then I re-placed the ‘top’ (which is actually the original bottom of the cake) on top of the ice cream layer. I did this so the bottom of the cake would fit nicely into the curve of the cake and that top would be nice and flat.
I frosted my Homemade Oreo Ice Cream Cake with my favorite frosting. It took me exactly one standard sized tub of store-bought frosting to ice this cake. After frosting it, I just stuck it in the freezer for a couple hours and it was ready to decorate and eat!
VOILA! A peanut/tree-nut free Homemade Oreo Ice Cream Cake for the whole family to enjoy. And enjoy we did. It was seriously one of the yummiest ice cream cakes I’ve ever had, if I do say so myself and almost put the birthday boy into a food coma! lol.

WHOA! What a clever idea! 🙂 I rememebr asking my mom to make me an ice cream cake one day when I was around 11 or 12 and she said: "Can't be done. You need a machine for that." LOL. IN her defense, desserts aren't her forte, but all this time I was just taking her response at face value, writing off ice cream cakes as being the work of some clever manipulation!
