I told the girls last night that I’d make them something yummy for breakfast this morning. They decided they wanted cinnamon muffins. Well, somehow I got DONUTS on the brain and decided to make some Baked Cinnamon Apple Donutsinstead.
Mmmmmm, donuts. Always reminds me of what I think is one of the funniest Simpsons episodes where Homer dreams his head turns into a donut and he just can’t resist nibbling on himself because he’s “so sweet and tasty.” lol!
So I went on Pinterest and found this recipe for baked donuts: Janie’s Kitchen’s Banana Chocolate Chip Donuts. Update: 10/2/19 – Unfortunately, the website is no longer available to so I’ll include the recipe below. Went for baked because I didn’t want to load the girls up on sugar AND grease just before school because I know just how that makes me feel – bleah!
I mostly followed the recipe but left out the bananas and chocolate chips, used mostly organic ingredients, and added my usual ingredients to make these even that much more wholesome (2 Tbsp Wheat Germ and 2 Tbsp Ground Flax Seed) as well as 1 cup of some Homemade Applesauce I had made last week. Baked Cinnamon Apple Donuts were the result!
Baked Cinnamon Apple Donuts
Ingredients
Donut
- 1 cup unsweetened applesauce
- 1/2 cup Greek yogurt, plain
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 apple, peeled and cubed small
- 1 tsp vanilla extract
- 1/4 cup butter, melted (1/2 stick)
- 2 cups flour (I used white wheat)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 2 Tbsp protein powder (optional)
- 2 Tbsp ground flax seed (optional)
- 2 Tbsp wheat germ (optional)
Glaze
- 1 cup confectioner's sugar
- 1/3 cup milk
Instructions
Donut

Pre-heat oven to 325 degrees F.

Grease donut pans using spray or brush on cooking oil.

In a large bowl, add applesauce, yogurt, and sugars and mix well.

Add melted butter, eggs, and vanilla extract and once again, mix well.

Add flour, baking powder, baking soda, cinnamon, salt and protein powder, ground flax seed, and wheat germ if using. Mix until just blended. Do not over mix.

Spoon batter into the large piping bag or take a ziplock bag, cut out a 1/2" corner for a makeshift piping bag. Once full, roll up end or seal shut and start piping batter into prepared donut pans.

Bake 12-15 minutes. Remove from pan and cool completely.
Icing

Meanwhile, in a smaller bowl, preferably with a bottom just big enough for one donut, add powdered sugar.

Slowly add half of milk while mixing well. Keep adding milk until you reach the consistency a little thinner than Elmer's glue.

Once donuts are completely cooled, dip top half into the icing and place on a pan or baking rack.

Eat immediately if you don't mind messy or let the icing set for about 20 minutes.

Mixed up the batter, piped them into my donut pan using my pastry bag (w/ large coupler in place but no tip) and then sprinkled some cinnamon sugar on top.
Once they came out of the oven, I decided they didn’t seem sugary enough so my next batch, I left the sugar off before baking, mixed up a quick batch of glaze (powdered sugar, a touch of vanilla and milk) and drizzled it on the baked donuts and sprinkled some cinnamon sugar on top.
With this donut below, I simply dipped the top into a bowl of the glaze. per recipe. Let it sit for a bit to “dry” and voila! Pretty!
Big Sis gobbled hers up in record time. I think that meant loved them (even though they were the healthier kind). BIG SMILE on MY face.
And a breakfast on-the-go the next morning. Added some sprinkles to jazz them up. ย
Tomorrow I think I’ll make some PUMPKIN donuts. Mmmm, donuts.

I made donuts here and there sporadically over the years. Usually did the canned biscuits and deep-fried them. They they were quite yummy, they always left me with a bleah queasy feeling after eating too many – i'm thinking it was the grease.
