HOMEMADE Ice Cream Cookie Sandwiches! Need I say more? I’ve always LOVED the ones from the store but have you read their ingredients list? I decided to try making my own and am quite happy with the way they turned out. Not only are they better for you, they taste BETTER than the ones I’ve bought from the store, too!!
Plan Ahead
Plan ahead when making these homemade ice cream cookie sandwiches. They are best when made a couple days in advance. This gives enough time for the ice cream to harden and the cookie to soften. This way, when you take a bite, the cookie won’t squish the ice cream out of the other end. How disappointing when that happens! We have still enjoyed them the day of, after a couple hours of freezing, but your sandwich will be that much more enjoyable if you can just wait. So be patient and plan ahead!
The Cookie
I’ve been making these with my favorite, go-to BEST BIG CHEWY CHOCOLATE CHIP COOKIES recipe. These cookies are soft and chewy and perfect for these sandwiches. If made as is, they will yield you a thick cookie sandwich like the ones pictured. But if you prefer your sandwich to be a little more wieldy, be sure to flatten the dough some with your hand or a spoon before baking. That will result in a much easier to eat ice cream cookie sandwich.
If you bake the cookies fresh, be sure to let them cool COMPLETELY before assembling them into sandwiches. I put them in the freezer for about 30 minutes to be doubly sure. Nothing is more frustrating than the mess of melting ice cream!
I often use cookies that have been sitting around for several days (if that’s even possible) and about to go stale. It makes me happy to give things a second life. After I made my last batch with such cookies, Little Sis told me I was a genius! ; )
The Ice Cream
The first time I made these sandwiches, my hubby had just made some Ice Cream Geek’s Ben and Jerry’s Sweet Cream Base ice cream. It’s our FAVORITE homemade ice cream ever and is SOOOOO GOOOOD! It definitely pushed these homemade ice cream cookie sandwiches to “gourmet” status!
But on those days when you just don’t have homemade ice cream lying around, lol, store bought ice cream works just as well. I like to use Breyer’s Extra Creamy Vanilla, Natural Vanilla or Homemade Vanilla. It helps when it comes out of a rectangle-ish carton that’s easy to remove.
The Side Toppings
There are so many options on how to decorate the side of your Homemade Ice Cream Cookie Sandwich with. My favorites are mini chocolate chips or leaving them plain, but here are some other ideas:
- mini chocolate chips
- rainbow/chocolate sprinkles sprinkles
- sugar sprinkles
- crushed Oreo cookies
- crushed candy canes
- crushed Andes mints

The Assembly
It’s fun to put these together but work quickly as ice cream melts fast!
Match up similar sized cookie pairs and set on a plate or other flat surface. Remove the ice cream from the container onto a cutting board. Cut a 1.5″ slice (or whatever thickness you’d like) of ice cream. Cut circles using a ~2.5″ round cookie or biscuit cutter and place them on to your cookie. You can also just use an ice cream scoop or spoon. It’s ok if the ice cream doesn’t fit the cookie perfectly. You can squish them together a bit so they do.
Place ice cream circle on top of 1/2 of your cookies.
Place second cookie on top and squeeze down until ice cream spreads out the sides.
Then dip the sides in your “side toppings” of choice.
Place in freezer flat on plates until ice cream has stopped melting and has hardened. Freeze for 1-2 days before enjoying!
The Verdict
Poor Little Sis couldn’t quite enjoy these with her loose tooth, so she just opted for the plain cookie instead. Big Sis really liked them and wanted to eat the whole thing but I only let her eat half. Mean Mommy! The biggest fan of all was Daddy who just couldn’t believe how yummy these were and ate the whole giant thing in about 3 minutes flat!
Homemade Ice Cream Cookie Sandwiches
Ingredients
- 24 2"-3" sized chocolate chip cookies
- 1 half gallon carton of vanilla ice cream
- mini chocolate chips, sprinkles, etc
Instructions

Match up similar sized cookie pairs and set on a plate or other flat surface.

Remove the ice cream from the container onto a cutting board.

Cut a 1.5" (or whatever thickness you'd like) slice of ice cream.

Cut circles using a ~2.5" round cookie or biscuit cutter and place them on to half of your cookies. Ice cream remnants can be re-formed by fitting into cutters, if using.

Place second cookie on top and press it down with your fingers until the ice cream spreads to the edge of your cookies.

If ice cream has melted too much, put assembled cookie sandwiches into freezer for 30 mins to an hour and then proceed to the next step.

Dip the sides in your "side toppings" of choice.

Place in freezer until the ice cream has stopped melting and has hardened enough to put in a Ziplock bag or container, about 1 hour.

Freeze for 1-2 days before enjoying!
