The girls are tracked out for three weeks and are enjoying a leisurely morning, as am I. Not really knowing what to make for lunch and certainly not feeling like putting a ton of effort into it, I threw these Spinach Artichoke Dip Nibble Plates together for each of them using my spinach artichoke dip recipe. I added chicken I defrosted from the freezer along with some crunchy sides. Plus we are heading to the NC State Fair tonight (can you say lots of greasy foods and sweets) so something healthy was a must. This was a win-win all around!
In this Lunch:
- Spinach artichoke dip with chicken
- Baby carrots
- Sharp cheddar cheese
- Sugar Snap Peas
- Tomatoes (for Little Sis)
- Ritz Toasted Chips
They they gobbled up their Spinach Artichoke Dip Nibble Plates, off we went to the fair! Here are some pix from our excursion. We went with cousins, a nana, an uncle and a friend, not all pictured here. A good time was had by all, as well as a lot of money spent. lol.

Sometimes on the days I don't have the time and motivation to make something my boys are happier! They love little tasting trays like this. I love the sound of the spinach artichoke dip, I must give it a try. When we lived in Arkansas for a couple of yrs I ate a lot of artichoke dip but have never tried making it. I don't really see it much in restaurants here in Scotland.
