I’ve really gotten in a rut of packing the same old lunches, day-in, day-out, so I pulled out my inspirational lunch-packing cookbook: The Best Homemade Kids’ Lunches on the Planet by Laura Fuentes of Momables, flipped through the pages and stopped at this one for Baked Ravioli. It looked simple enough and I already had frozen ravioli on-hand as it’s in the regular rotation. But with just a little extra effort, it transformed into something new and interesting, for them AND for me!
I snuck a quick taste and man, delicious! I used some panko bread in addition to some homemade breadcrumbs I already had on-hand. Yum. Both girls were rather interested in what I was doing and said they were looking forward to lunch. I hope it holds up well in their containers and don’t get too soggy. I’ll try to remember to report back later.

- Koala Sugar cookie that Little Sis made AND decorated, all by herself!
- Pineapples and strawberries

- Cascadian Farm Organic Granola Bars
